They’re great to pack for lunch as a sandwich/burrito replacement because they don't get soggy the way bread and tortillas do. Collard wraps are filling and nutritious, but also super light and don’t make you feel like collapsing into a food coma forever after you eat them.
The best thing about collard wraps is they only take about 15 minutes total. What more can you ask for in a recipe?! They can be done tons of different ways depending on what you’re feeling and they're a great way to use up whatever veggies you have left in your fridge. The whole recipe is super easy, and doesn't involve much prep time. Just peel and slice the veggies you’d like to use and set them aside. (I like to wash, peel, and chop up my veggies ahead of time and store them in the fridge for a few days. This makes it more convenient to just throw them into a wrap or salad because they’re already ready to go).
